Local residents Trinity Laughlin and Ella Johnson eagerly joined the opening festivities, having been avid fans of the brand since the last store closed in Fargo in June 2023. Their dedication to Taco John’s is evident; the two women have traveled over 1,000 miles to satisfy their cravings for the chain’s signature Potato Olés.
The excitement was palpable as Laughlin and Johnson arrived at the new location after work, joining a long queue of enthusiastic customers. They patiently waited for approximately 30 minutes, despite the drive-thru line extending nearly to 45th Street. Their order of a Six Pack and a Pound—six tacos accompanied by a pound of Potato Olés—was worth every moment. As Johnson noted, “The food was amazing. It was so worth the wait.”
Long-Distance Taco Pilgrimage
Laughlin and Johnson’s journey as Taco John’s enthusiasts began when the franchise’s previous location in Fargo shut down. Both women met while working at Men’s Hair Co. in West Fargo, where they bonded over their love for the beauty industry and their mutual appreciation for Taco John’s cuisine. They quickly became friends, sharing their disappointment over the absence of Taco John’s in the Fargo-Moorhead area.
Determined not to let their cravings go unfulfilled, the duo embarked on road trips to nearby towns, including Wahpeton, N.D., and Detroit Lakes, Minn., to indulge in their favorite fast food. In a Forum article from November 2024, the friends reflected on their mileage, estimating they had driven nearly 1,000 miles in pursuit of their West-Mex favorites. Their story captured the attention of Taco John’s corporate headquarters, which sent the pair merchandise, including stainless steel tumblers, hats, and gift cards, as a gesture of appreciation for their loyalty.
Laughlin and Johnson continued to make trips to enjoy Taco John’s menu, adding at least seven more journeys to their tally since the corporate recognition. Their commitment to the brand and each other has only strengthened over time.
Thrilled to Reunite with Taco John’s
The announcement last fall that the Pentex Restaurant Group would reopen Taco John’s in Fargo sparked joy for the two friends. They expressed their excitement upon learning of plans for additional locations as well. “We were extremely happy when we heard of the locations opening in Fargo,” Laughlin stated, recalling how they simultaneously reached out to each other with their enthusiasm.
Their long-awaited visit finally happened on January 5, and both were elated to find their beloved fast food back in town. As Johnson, now a cosmetology student, dreams of working alongside Laughlin, she emphasizes that their adventures are not solely about the food. “We would definitely make more road trips just for the fun of it. It’s fun having new scenery every once in a while,” she remarked.
The return of Taco John’s to Fargo not only revives a cherished dining option for local fans but also marks a significant milestone for Laughlin and Johnson, whose shared passion for the brand has fostered a unique friendship.
